Though it tastes like a fancy dessert you could find in a high-end restaurant, creating it is only slightly more involved than whipping up a batch of instant pudding. In fact, that is the primary ingredient. What You’ll Need
• 1 4-serving size package of chocolate instant pudding
• 1 4-serving size package of vanilla instant pudding
• 2 cups heavy cream
• 2 cups milk
• Large metal mixing bowl
• 2 mixing bowls
• Hand mixer
• Individual serving dishes or large glass serving bowl
• Rubber spatula
• Optional – two large pastry bags with large star tips
What to Do
• Put the metal mixing bowl and the beaters of the mixer into the freezer for 20 minutes before getting started on the recipe. This will help the heavy cream whip up faster and thicker, and maintain its body throughout the preparation
• Pour the heavy cream into the chilled mixing bowl and whip with the chilled beaters until very thick and stiff. The mixture should form high, stiff peaks when you lift the beaters
• Empty the packets of instant pudding into the mixing bowls, vanilla in one and chocolate in the other
• Prepare the two flavors of pudding by adding one cup of whole milk into each bowl and mixing for 2 minutes or until completely incorporated with no lumps
• Allow the two puddings to set for 5 minutes
• Divide the whipped cream into 2 equal portions
• Use the rubber spatula to carefully fold 1 portion of the whipped cream into each of the flavors of the pudding. Mix lightly to fully incorporate the cream but not deflate it
• Chill for 10 minutes to allow to set slightly
• Spoon a layer of the vanilla mousse into the bottom of each of the individual serving dishes or the large serving dish
• Top this layer with the chocolate mousse
• For a more attractive presentation, put each of the flavors of mousse into an individual pastry bag fitted with a large star tip
• Create a layer of vanilla mouse in the bottom of the dish by squeezing the pastry bag and making an even, consistent line of mousse around the edge of the dish, then continue making smaller circles within the first until the layer is finished
• Repeat with the chocolate mousse
• Top with additional whipped cream if desired
